White Chicken Chili

Serve with Mexican corn bread!
List of Ingredients
1 medium onion, chopped
2 cloves garlic, minced
1 Tbsp olive oil
4 cooked, boneless skinless chicken breast halves, diced
2 cans chicken broth (14oz each)
1 can chopped green chilies (4oz)
2 tsp ground cumin
2 tsp dried oregano
1 ½ tsp cayenne pepper
3 cans great northern beans, drained and divided
1 cup shredded Monterey Jack cheese
Chopped jalapeno pepper – optional
Recipe
In a large saucepan over medium heat, cook the onions and garlic in oil for 5-10 minutes or until onions are tender. Add chicken, broth, chilies, cumin, oregano and cayenne pepper; bring to a boil.
Reduce heat to low. Mash one can of beans until smooth, add to saucepan. Add remaining beans. Simmer for 20-30 minutes until heated thoroughly. Top each serving with cheese and jalapeno if desired.
Yield: 10 servings
