Blueberry Muffins

1 egg
1/2 cup milk
1/4 cup vegetable oil
2 tsp. baking powder
1/2 cup sugar
1 1/2 tsp. salt
1 cup fresh blueberries, drainedRecipe
Heat oven to 400 degrees. Grease bottom of baking cups or use paper baking cups.
Beat egg with folk. Stir in milk and oil. Blend in combined dry ingredients, stirring just until flour is moistened. Batter will be lumpy. Do not over-mix. Fold in blueberries. Fill muffin cups about 2/3 full. Bake for 20 to 25 minutes or until golden brown. Loosen immediately with spatula.
YIELDS: 12 muffins.
