4x 280g/10oz fresh salmon steaks
55g/2oz butter
Pinch of sea salt
8 peppercorns
1 fresh dill sprig
1 fresh tarragon sprig
1 lemon slice
450g/1 ib dried penne
1 tbsp olive oil
THE SAUCE
25G/1 OZ plain flour
150 ml/5 fl oz warm milk
Juice and Grated rind of 2 lemons
55g/2 oz water cress chopped
Salt And Pepper
TO GARNISH

Recipe
"1. put the salmon into a large frying pan Add sea Salt Peppercorns Dill Tarragon and lemon .cover and bring to the boil over a low heat and simmer for 10 mins 2. Carefully remove the salmon with a fish slice . strain and reserve the cooking liquid . remove the salmon skin and centre bones and discard . Put into a dish cover and keep warm . 3. meanwhile bring a large pan of lightly salted water to the boil over a medium heat . Add the pasta and 1 teaspoon of the oil and cook for 12 mins or until tender but still firm to the bite . Drain and sprinkle over the remaining oil . put into warm serving dish top with salmon steak and keep warm 4.to make the sauce. Melt the butter over a low heat and stir in the flower for 2 mins . stir in the milk and 7 table spoons of cooking oil add the lemon juce and rind and cook stirring for 10 mins 5.add water crest to the sauce and season to taste with salt and pepper 6.pour the sauce over the salmon garnish with lemon slices and watercress and serve immediately
