1 quart cherries -- fresh, pitted
3/4 cup sugar
2-1/2 tablespoons all-purpose flour
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup shortening
1/2 cup milk
Vanilla ice cream
Recipe
Combine first 3 ingredients; stir well. Spoon into an 8-inch square baking dish. Combine 1 cup flour, baking powder and salt; cut in shortening with pastry blender until mixture resembles coarse meal. Sprinkle milk evenly over flour mixture; stir with a fork until all ingredients are moistened. Drop by rounded teaspoonfuls over cherries. Bake at 350 degrees F. for 45 minutes or until crust is browned. Serve with ice cream. Yield: 8 servings.
