    LEMON CHEESECAKE PIE

    List of Ingredients




    1-1/4 cups graham cracker crumbs
    3 tablespoons butter or margarine -- melted
    3 ounces lemon gelatin powder
    1 cup boiling water
    2 cups lowfat cottage cheese
    1 teaspoon grated lemon peel

    Recipe



    Heat oven to 350 degrees F. In small bowl, combine graham cracker crumbs and butter; mix well. Press in bottom and up sides of 9-inch pie pan. Bake at 350 degrees F. for 4 to 5 minutes or until crust is light brown. Refrigerate to chill. In small bowl, dissolve gelatin in boiling water. Cool to lukewarm. In blender container, blend cottage cheese and lemon peel until smooth. Slowly blend in gelatin mixture; pour into chilled crust. Refrigerate until set; about 2 hours. Yield: 8 servings.
