6 medium zucchini
1 can (12 oz.) whole kernel corn (drained)
2 eggs (beaten)
1/4 cup chopped chives
2 teaspoons seasoned salt
1/2 cup grated sharp Cheddar cheese

In a large saucepan, cook zucchini in boiling water to cover 5 minutes. Cut in half lengthwise; remove pulp. Chop pulp into small pieces, then combine with corn, eggs, chives and seasoned salt. Pour mixture into zucchini shells. Place in 2 quart oblong baking dish. Sprinkle with cheese and paprika. Bake, uncovered, at 350 degrees 30 minutes or until cheese melts. Makes 6 servings. Great with grilled chicken or fish.
