LEMON ROASTED CHICKEN

List of Ingredients
- 1 Fryer or roasting chicken (3-4 lbs.)
- 1/2 cup chopped onion
- 2 TBL. butter
- Juice of 1 lemon
- 1 TBL. fresh parsley
- 2 tsp. grated lemon peel
- 1/4 tsp. salt
- 1/4 tsp. dried thyme leaves
Instructions
- Rinse chicken and pat dry with paper towels. Remove and discard any excess fat.
- Place onion in cavity of chicken and rub skin with butter. Place chicken in crockpot.
- Squeeze juice of lemon over chicken. Sprinkle with parsley, grated lemon peel, salt, and thyme.
- Cover and cook on LOW 6-8 hours.
