Espresso Brownies

- ESPRESSO BROWNIES:
- 1 cup flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/3 cup water
- 1 TBL. instant espresso powder or instant coffee crystals
- 1 cup white sugar
- 1/2 cup softened butter or margarine
- 2 cups semi-sweet chocolate morsels
- 3 eggs
- ESPRESSO FROSTING:
- 1/2 cup whipping cream
- 1 tsp. instant espresso powder or instant coffee crystals
- 1/2 cup sifted powdered sugar
Instructions
- For Brownies: Combine the flour, powder, and salt in a bowl. Heat water and espresso powder in saucepan over low heat, stirring to dissolve espresso. Add white sugar and butter; cook, stirring constantly, until mixtures comes to a boil. Remove from heat; stir in 1 cup of morsels until smooth. Add eggs, one at a time, stirring well after each addition. Stir in flour mixture. Pour into greased 9" square baking pan.
- Bake at 350 for 25-30 minutes or until a wooden toothpick inserted in the center comes out slightly sticky. Cool completley in pan on a wire rack.
- For Frosting: Heat cream and espresso powder in a small, heavy, saucepan over low heat, stirring to dissolve espresso. Add remaning morsels, stirring until
smooth. Remove from heat; stir in powdered sugar. Chill until frosting is of spreading consistency. Spread onto brownies. Cut inot squares.
- Makes 3 dozen brownies.
