Beefy Tomato Pasta Sauce

List of Ingredients
- 1 1/2 pounds of lean ground beef
- 1(46oz.) can tomato juice
- 1(12oz.) can tomato paste
- 1(10 3/4oz.) can tomato soup
- 1/2 cup grated Parmesean cheese, divided
- 1/4 cup chopped fresh parsley or 4 tsp. dried parsley
- 1 TBS. sugar
- 1 tsp. dried oregano
- 1/2 tsp. each poultry seasoning, nutmeg, and dried thyme
- 1/4 tsp. dried sage
- 32oz. vermicelli
Instructions
- Cook beef in a large skillet, stirring until browned and crumbly. Place in a colander. Pour hot water over beef and drain well. Wipe skillet with a paper towel to remove and drippings. Return beef to skillet.
- Add tomato juice, tomato paste, soup and 1/4 cup Parmesean cheese to beef mixture and mix well. Stir in parsley, sugar, oregano, poultry seasoning, nutmeg, thyme and sage. Bring to a boil over high heat, stirring frequently.
- Reduce heat to low; cover skillet and simmer for 1- 1 1/2 hours.
- Cook pasta using package directions; drain. Rinse with cool water; drain again. Transfer the pasta to individual serving plates. Top with the sauce. Sprinkle with remaining Parmesean. Serve with a tossed green salad, and crusty French bread, if desired.
