    LAYERED TURKEY CASSEROLE

    List of Ingredients


    • 8 slices white bread, trimmed
    • 4 cups chopped cooked turkey
    • 5 TBL. butter, divided
    • 8oz. fresh mushrooms
    • 1(8oz.) can water chestnuts
    • 1/2 cup low-fat mayonaise
    • 6oz. sliced Monterey Jack cheese
    • 4oz. sliced Cheddar cheese
    • 1 1/2 cups skim milk
    • 1 (10.75oz.) can each cream of chicken soup and mushroom soup
    • 3 large eggs beaten
    • 2/3 cup bread crumbs


    Instructions


    1. Butter a 9x13" baking pan. Arrange bread slices in prepared baking pan. Sprinkle turkey over bread.
    2. Slice mushrooms. Cook in melted butter over medium high heat until tender, about 5 minutes. Spoon over turkey.
    3. Drain and chop the water chestnuts. Mix chestnuts and mayonaise in a small bowl. Spread over the mushrooms. Arrange cheeses over the chestnut mixture.
    4. Combine milk, soups, and eggs in a large bowl. Pour over layers. Chill covered for 3 hours.
    5. Preheat the oven to 325. Bake for 1 1/4 hours.
    6. Melt remaining butter in a small saucepan. Add bread crumbs and toss to coat. Sprinkle over the casserole. Bake for 15 minutes longer.
