LAYERED TURKEY CASSEROLE

List of Ingredients
- 8 slices white bread, trimmed
- 4 cups chopped cooked turkey
- 5 TBL. butter, divided
- 8oz. fresh mushrooms
- 1(8oz.) can water chestnuts
- 1/2 cup low-fat mayonaise
- 6oz. sliced Monterey Jack cheese
- 4oz. sliced Cheddar cheese
- 1 1/2 cups skim milk
- 1 (10.75oz.) can each cream of chicken soup and mushroom soup
- 3 large eggs beaten
- 2/3 cup bread crumbs
Instructions
- Butter a 9x13" baking pan. Arrange bread slices in prepared baking pan. Sprinkle turkey over bread.
- Slice mushrooms. Cook in melted butter over medium high heat until tender, about 5 minutes. Spoon over turkey.
- Drain and chop the water chestnuts. Mix chestnuts and mayonaise in a small bowl. Spread over the mushrooms. Arrange cheeses over the chestnut mixture.
- Combine milk, soups, and eggs in a large bowl. Pour over layers. Chill covered for 3 hours.
- Preheat the oven to 325. Bake for 1 1/4 hours.
- Melt remaining butter in a small saucepan. Add bread crumbs and toss to coat. Sprinkle over the casserole. Bake for 15 minutes longer.
