    List of Ingredients


    • 8 large fresh mushrooms
    • 1/2 bunch fresh parsley or 2 1/2 TBL. dried parsley
    • 1/2 bunch fresh basil or 2 1/2 TBL. dried basil
    • 6 green onions, coarsley chopped
    • 3 cloves of garilc
    • 1 cup (4oz.) cubed boiled ham
    • 1/2 cup Italian-style bread crumbs
    • 2 TBL. lemon juice
    • 1/4 cup olive oil
    • 1/4 tsp. pepper


    Instructions


    1. Preheat oven to 375. Lightly grease large baking sheet with nonstick cooking spray. Gently clean mushrooms with damp towel.
    2. Carefully seperate mushroom caps from stems by holding caps and twisting off stems. Reserve stems and set caps aside.
    3. For filling, in a bowl of food processor or blender, combine mushroom stems, parsley, basil, garlic, green onion, and ham; process using on/off pulsing action until finely chopped. Transfer to a medium bowl. Stir in bread crumbs, lemon juice, olive oil, and pepper until well blended.
    4. Place mushroom caps upside down on prepared baking sheet. Using teaspoon, carefully stuff caps with filling. Bake until heated through, about 15 minutes. Serve immediately.
