Sweet and Sour Pork Chops

- 1/2 cup all-purpose flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 6 (1/2" thick) boneless pork chops
- 2 TBS. vegetable oil
- 1 (8 1/4oz.) can crushed pineapple
- 1 green bell pepper, chopped
- 1 cup chopped onion
- 1 TBS. molasses
- 1 TBS. soy sauce
- 1/2 tsp. ground ginger
- Hot cooked rice, optional
Instructions
- Combine the flour, salt, and pepper in a bowl and mix well. Coat the pork chops with the flour mixture.
- Cook pork chops in vegetable oil in a 10" skillet over medium heat until browned, about 3 minutes per side. Reduce heat to low.
- Place undrained pineapple juice in a 1-cup measure. Add enough water to measure 1 cup. Pour over pork chops in skillet. Add bell pepper and onion and mix well.
- Combine molasses, soy sauce and ginger in a small bowl and mix well. Stir into the pork chop mixture.
- Simmer, stirring occassionally, for 30 minutes. Serve over rice, if desired.
