Swedish Meatballs
List of Ingredients
1 lb. ground beef
5 TBL. beef bouilion
1/4 cup of water
1 cup bread crumbs
1 small onin, chopped
1 egg
1 20oz. can of pineapple chunks, juice reserved
1/3 cup of lemon juice
3 TBL. brown sugar
2 TBL. soy sauce
1 tsp. ground ginger
1 green pepper cut inot strips

Dissolve 2 TBL. bouilion in water over low heat. Combine this with the beef, breadcrumbs, onion, and egg. Mix and shape into meatballs. Brown in hot oil. In a 2 cup measure, combine 1/4 cup of reserved pineapple juice and lemon juice, sugar, soy sauce, remaining bouilion, and ginger. Add to the meatballs along with the pineapple chunks and green pepper strips. Cover and simmer for 20-25 minutes. Serve over hot cooked rice.
