Mexican Casserole

Recipe Introduction
This dish is so convienient because it is made the night before. When you come home in the evening, just pop it in the oven! Excellant served with mexican rice.
List of Ingredients
- 1 lb. ground beef
- 1 cup refried beans
- 2 1/2 TBL. chili powder
- 1 1/2 TBL. oregano
- 1 16oz. jar of picante sauce
- 2 1/2 cups water
- 16 oz. carton of sour cream
- 2 cups of montery jack/cheddar cheese blend
- 1 package of manicotti shells
- sliced black olives and green onions, optional
Instructions
- In a bowl combine the uncooked beef, refried beans, chili powder, and oregano. Stuff into the manicotti shells.
- Combine the water and picante sauce. Pour over the shells. Cover and refrigerate overnight.
- Remove from fridge and uncover 30 minutes before baking. Preheat oven to 350.
- Cover and bake for 1 hour. Remove cover and sprinkle with the sour cream, cheese, and olives and onions.
- Return to oven for 5-10 minutes or until cheese is melted.
