SARAH'S SPECIAL CHICKEN ENCHILADAS

List of Ingredients
- 4 boneless, skinless chicken breast
- 1 bottle of enchilada sauce, divided
- 1 8oz. can of diced green chilies
- 1cup of shredded mozzarella cheese
- 1 cup of shredded cheddar cheese
- 8 flour tortillas 8" in diameter
- Guacamole sauce
- Sour Cream
- Shredded lettuce
- Additional cheese if desired
Instructions
- Cook the chicken breast in boiling water until tender. Drain and shred.
- In a bowl, combine the chicken, 1 cup of the enchilada sauce, green chilies, and the cheese's.
- Fill the tortilla's with about 1 TBL. of the filling mixture.
- Roll up and place in a 9x13" baking dish. Pour the remaning enchilada sauce over the shells.
- Bake uncovered at 350 for 20 minutes.
- Serve with the guacamole sauce, sour cream, shredded lettuce, and the additional cheese's, if desired.
