Sweet and Sour Pork over Rice
List of Ingredients
1 lb. pork tenderloins, cubed
2 TBS. oil
1 small onion, chopped
1/4 cup vinegar
1 TBS. cornstarch
1/2 tsp. salt
1/4 tsp. ginger
1/8 tsp. pepper 1 jar of currant jelly or cherry jelly
1 green pepper cut into strips
1 red pepper cut into strips
1 small can of pineapple chunks, drained

Brown pork and onion in hot oil. Combine the vinegar, cornstarch, salt, ginger, and pepper; add the jelly and stir. Pour over pork. Bring to a boil, add the peppers and pineapple, reduce heat cover and simmer for 20 minutes. Serve over hot cooked rice.
