    List of Ingredients


    • 4 TBS. butter
    • 4 large onions thinly sliced
    • 8 cups beef broth
    • 1 TBS. sugar
    • 1/4 tsp. pepper
    • 1/4 c. dry sherry
    • Dash of cognac
    • salt to taste
    • 6-8 slices French bread
    • Shredded Swiss cheese


    Instructions


    1. Melt butter in a heavy skillet. Add onions and cook very slowly over low heat, stirring often, for at least 30 minutes. The slow cooking will bring their full flavor out and give them a deep golden color without scalding. While they are cooking, place broth in a large saucepan and bring to a boil. When onions are a deep gold, add them to the broth with the sugar and pepper. Add the sherry and cognac and simmer for 1 hour.
    2. Place soup in individual bowls and place a slice of French bread on top with a layer of shredded Swiss cheese. Place under broiler and broil until cheese is bubbly.
