French Onion Soup

List of Ingredients
- 4 TBS. butter
- 4 large onions thinly sliced
- 8 cups beef broth
- 1 TBS. sugar
- 1/4 tsp. pepper
- 1/4 c. dry sherry
- Dash of cognac
- salt to taste
- 6-8 slices French bread
- Shredded Swiss cheese
Instructions
- Melt butter in a heavy skillet. Add onions and cook very slowly over low heat, stirring often, for at least 30 minutes. The slow cooking will bring their full flavor out and give them a deep golden color without scalding. While they are cooking, place broth in a large saucepan and bring to a boil. When onions are a deep gold, add them to the broth with the sugar and pepper. Add the sherry and cognac and simmer for 1 hour.
- Place soup in individual bowls and place a slice of French bread on top with a layer of shredded Swiss cheese. Place under broiler and broil until cheese is bubbly.
