Sarah's Homemade Beef Stew

Recipe Introduction
This is a perect way to use up leftover roast and vegetables. My kids absolutley love this stew!
List of Ingredients
- 1 boneless beef roast, trimmed of all visable fat.
- 3 medium potatoes cut into medium size chunks.
- 1 small bag of baby carrots.
- 1 packet each of brown gravy mix, mushroom gravy, & onion gravy mix.
- 1 TBS. cornstarch
- 1TBS. water
- salt and pepper
Instructions
- In a dutch oven , brown the meat in 1 TBS. of oil until brown. Transfer to a slow cooker.
- Sprinkle with salt and pepper. Add vegetables. Cover and cook on low for 8-10 hours or until meat is done and vegetables are tender.
- With a slotted spoon, remove the vegetables to a serving bowl. Cover to keep warm. Transfer meat to a cutting board. Let set for about 10 minutes before cutting.
- Meanwhile add the gravy mix to the dutch oven with 3 cups of water. Bring to a boil over med heat.
- In a bowl, mix the water and cornstarch. Add to the gravy mixture.
- Add the meat and vegetables. Reduce heat, cover and simmer for 20 minutes.
- Serve with cornbread or dinner rolls.
