List of Ingredients
1 chicken cut into 20 pieces
1cm crushed galangale
2 curry leaves
3 orange leaves
2 tomatoes each cut into eight pieces
2 tablespoon of soy sauce
Sauce Ingredients:
7 red chillies
5 onions
4 cloves of garlic
2cm ginger
3 seeds from candlenut tree
1/2 teaspoon terasi which has been fried ('terasi' is a condiment made
from pounded and fermented fish)
Recipe
Add salt to the chicken (which is already cut up and cleaned), allow to
sit for a short while, fry until half cooked, and then set it aside
Saute the finely chopped sauce ingredients until it is aromatic, add the
galangale, curry leaves, orange leaves, tomato and soy sauce.
Add the half-cooked chicken, cook until the tomato is broken down and the
sauce has soaked into the chicken, then it is ready to serve
