2 kg green (uncooked) prawns Lemon Wedges
Salt Pepper
1 Clove garlic 1 Med hot chilli
Corn Flour Egg
Breadcrumbs Peanut Oil

Peel and devein Prawns, except for the tail and the closest segment to the tail. Flatten prawns with a rolling pin or meat cleaver.
Finely slice and chop the garlic and chilli. Combine salt, pepper, chilli and garlic, add the prawns and toss occasionally.
Keep refridgerated at least 1/2 hour, preferably 1 - 2 hours.
Dust with corn flour (add flour to plastic bag). Throw in the prawns and shake carefully. Roughly beat the egg. Add the prawns to the egg and then coat with breadcrumbs. Cook quickly in hot peanut oil, until golden brown. Drain on absorbent paper.
Serve with lemon wedges.
