    Recipe Introduction

This is one of my husbands favorites. He's so happy he's
    married to an Italian

    List of Ingredients

    2 tablespoons olive oil
    1 medium onion, finely chopped
    1 carrot, finely chopped
    1 celery stalk, finely chopped
1 ½ pounds ground meat for meat loaf or ½ pound each ground beef, veal, and pork
    ½ cup dry red wine
1 can (35 ounces) tomatoes, chopped, juice reserved
    2 teaspoons salt
    ¼ teaspoon ground black pepper
    1/8 teaspoon ground nutmeg
¼ cup heavy or whipping cream
1 package (16 ounces) spaghetti or fettuccine, cooked
    Freshly grated parmesan cheese

    Recipe

    1. In a pot, heat olive oil over medium heat. Add onion, carrot, and celery and cook, stirring occasionally, about 10 minutes, or until tender.

    2. Add ground meat to vegetables and cook, stirring frequently to break up meat, until meat is no longer pink.

    3. Stir red wine into meat mixture and heat to boiling over high heat. Stir in tomatoes with their juice, salt, pepper, and nutmeg.

    4. Heat mixture to boiling: reduce heat to low and simmer, uncovered, and stirring occasionally, 1 hour. Stir in cream and heat through, stirring constantly. To serve, use half of sauce to toss with pasta (cool remaining sauce, then freeze for use another day). Serve with freshly grated Parmesan cheese
