List of Ingredients
4 whole eggs
9 egg whites
1/2 cup flour
1 tsp baking powder
1/2 tsp salt
1 1/2 cups lowfat cottage cheese
2 cups mexican, cheddar, or other shredded cheese (2% milk)
1 jar of chopped pimentos(the smallest you can buy)
4 T sliced black olives
10 oz defrosted frozen spinach (may substitute another veggie)
Recipe
Preheat oven to 350 degrees
1. Mix eggs, flour, baking power, and salt. Mix well.
2. Then stir in cottage cheese and shredded cheese.
3. Add in pimentos, black olives, and defrosted spinach (or other veggies that you like).
4. Bake in a greased 9x13 pan for 40-45 minutes.
