Drain artichoke hearts, save juice. Chop. In a frying pan, saute onion and garlic in juice from artichokes. In a bowl, mix eggs, pepper, salt, oregano, parsley, cracker crumbs and cheese. Add the onion/garlic mixture. Put batter in a 7-by-11 inch greased baking pan. Bake for 30 minutes. Cut into small squares. Let stand for 10 minutes. Yield: serves 8.
