    List of Ingredients





    4 cups biscuit or 2-day old bread crumbs
    1 1/2 cups sugar
    1/2 teaspoon nutmeg
    3/4 teaspoon cinnamon
    1 cup shredded coconut
    2 1/2 cups crushed fresh pineapple
    1 cup raisins
    1/2 cup evaporated milk
    2 eggs
    2 to 4 tablespoons melted butter or margarine

    Recipe



    Preheat oven to 375 degrees. Grease a (9- by 13-inch) baking pan.

    In a bowl, combine biscuit or bread crumbs, sugar, nutmeg, cinnamon,
    coconut, pineapple, raisins, milk, eggs and melted butter. Pour into baking
    pan.

    Bake for 1 hour or until a toothpick inserted in pudding comes out clean.

    Makes 12 servings.

    Per serving: fats, 9 grams (28% of calories); calories, 275; cholesterol, 50
    milligrams; carbohydrate, 48 grams; fiber, 2 grams; protein, 4 grams;
