3 egg whites, room temp
3/4 c. sugar
5 tbs. cocoa
Recipe
Beat the egg whites until stiff, then gradually add the sugar and cocoa. Butter a muffin pan VERY WELL and fill them 3/4 full with the meringue. Put in a COLD oven, and turn the heat to 250. Bake for 1 hour.
Remove from oven and cool in the pan for 10 minutes. Run a sharp knife around them and turn out. Tops should be crisp, bottoms chewy.
Cut off the tops of each muffin and fill it with ice cream, fruit and whipped cream, whatever sweet suits your fancy! Makes 6-9 muffins.
