Ingredients:
3 cups flour
1 cup sugar
1 cup orange juice
3 1/2 teaspoon baking powder
1/4 teaspoon salt
3 Tablespoon grated orange rind
1/3 cup butter or margarine (melted then cooled)
1 egg
1 cup cranberries
Recipe
Preparation:
Preheat oven to 350º. Grease and flour 9in.x5in. loaf pan—set aside. In a large bowl stir together flour, sugar, baking powder and salt. In a small bowl combine orange rind, orange juice, butter or margarine and egg until well blended. Make a well in the center of the dry ingredients. Pour orange juice mixture in and stir until dry ingredients are just moistened. Add cranberries. Spoon into prepared pan and bake 1 hour or until toothpick inserted in center comes out clean. Cool 10 minutes and remove from pan. Cool completely on wire rack. Wrap in foil and refrigerate.
Optional Topping:
1/2 cup sugar
2-3 Tablespoons orange juice
Mix sugar and orange juice together to make a paste and spread on warm bread after it comes out.
