1 bunch asparagus
1 medium potato
1 tablespoon parsley
2 tablespoons grated Romano cheese
7 eggs
Recipe
Slice potato thinly and sautee in ovenproof pan with 1 tablespoon olive oil till soft. Throw in asparagus and saute till just soft on outside (about 2-3 minutes). Mix eggs, parsley, cheese, salt and pepper to taste and pour into pan with vegetables. Bake in 350 degree oven about 20-30 minutes till puffed and lightly brown on top. Serve immediately. Great spring supper
