    Waffles with Raspberries

    List of Ingredients




    Thick, tender waffles flecked with bits of lemon peel are drizzled with a smooth berry sauce.

    1 pkg. (10 oz.) frozen raspberries in light syrup, thawed
    3/4 cup sugar, divided
    1 3/4 cup all purpose flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    4 eggs
    1 1/2 cup buttermilk
    1/2 cup lemon juice
    2 tsp grated lemon peel
    1/2 cup butter, melted
    raspberries for garnish

    In food processor or blender, place thawed raspberries in syrup and 1/4 cup sugar. Process 1 min. until sugar is dissolved. Strain raspberry sauce through sieve; discard seeds and set sauce aside.
    Preheat Belgian waffle iron. In large bowl stir together flour, baking powder, baking soda and salt. In med. bowl, beat together eggs, remaining 1/2 cup sugar, buttermilk, lemon juice and lemon peel. Stir liquid ingredients into dry just until combined. Stir in butter. Cook waffles according to waffle iron manufacture's directions.
    Serve waffles with sauce. Garnish with whole raspberries. Makes 4 servings.
