    A rustic looking pie highlighting tart cranberries

    List of Ingredients





    2 pie crusts
    2 cups cranberries
    1 cup sugar, divided
    1/2 cup brown sugar
    1 cup coconut
    1 cup chopped pecans
    1 cup all-purpose flour
    2 eggs, beaten
    1/3 cup butter, melted, plus enough vegetable oil to make 3/4 cup
    1 teaspoon vanilla extract

    Preheat oven to 425° F

    Recipe




    Prick pie crusts with a fork and bake for 5 minutes.

    Reduce heat to 350°F.

    Combine cranberries, 1/2 cup sugar, brown sugar, coconut and pecans.

    Pour cranberry mixture into pie crusts.

    Mix together flour, 1/2 cup sugar, eggs, butter and oil, and vanilla. Spread gently over cranberry mixture.

    Bake for 35 to 40 minutes.

    Yield 16 servings
