Funnel Cake
List of Ingredients
2 1/2 cups self-rising flour
1/4 cup sugar
2 cups milk
2 beaten eggs
Oil for frying
Powdered sugar
Recipe
Combine flour, sugar, milk and eggs; beat until smooth. Heat 1/4 inch of oil
in skillet to 400 degrees. Pour batter in funnel, keeping the hole covered.
Uncover hole to release batter; move funnel in circular motion to form a
spiral cake. Fry until browned on both sides, turning once. Drain on paper
towels; sprinkle with powdered sugar; serve warm. Makes about a dozen 5-inch
cakes.
NOTE: If batter is too thick, add additional milk a little at a time until
the desired consistency is reached (should smoothly run through funnel, but
not be too thin).
