Recipe Introduction
Several readers requested the recipe for Kentucky Pie, which I mentioned in an October column as having tasted at a potluck dinner.
List of Ingredients
1 stick (8 tablespoons) margarine or butter, melted
3/4 cup sugar
1/2 cup all-purpose flour
2 eggs, lightly beaten
1 tablespoon bourbon
1 unbaked 8-inch pie shell
3/4 cup chopped nuts
3/4 cup chocolate chips
Recipe
1. Preheat oven to 350 degrees. In bowl of electric mixer, combine butter
and sugar and beat for a couple of minutes. With mixer on low, stir in
flour, then gradually add eggs until well-blended. Add bourbon and stir
until batter is thick.
2. Place pie crust on a cookie sheet, to catch any spills. Spread nuts and
chocolate chips over bottom of pie crust. Pour batter over chips and nuts.
Bake 30 to 40 minutes, or until golden brown. Cool to room temperature
before serving.
