Lemon Chess Pie

List of Ingredients





3 eggs, beaten until light
1-1/2 cups sugar
1-1/2 lemons, juiced
Grated rind from 1 lemon
3 tablespoons butter, melted
1/2 teaspoon salt
1 pastry shell unbaked



Recipe



Preheat oven to 350 degrees. Combine the first six ingredients and pour into the pastry shell. Bake for 25 to 30 minutes. Check for doneness by inserting a knife and seeing if it comes out clean.
