    Chiles Rellenos Casserole

    List of Ingredients





    1 pound ground beef
    1 small onion, chopped
    2 cans (4 oz. each) whole green chiles
    1-1/2 cups shredded cheddar cheese
    4 eggs
    1 cup half and half (light cream)
    1/4 teaspoon salt, if desired
    1/2 teaspoon pepper
    1/8 teaspoon Tabasco sauce

    Recipe




    Crumble beef into a microwave-safe plastic colander; mix in onion. Place colander in a large bowl. Microwave, uncovered, on High 4 to 5 minutes, stirring if necessary, until pink color is gone from meat; discard fat collected in bowl. Drain green chiles. Cut in halves lengthwise; remove seeds. Place half of the chiles in a 10 by 6 inch baking dish. Sprinkle with cheese. Cover with meat mixture. Arrange remaining chiles over meat.
    Beat eggs; mix in half-and-half, salt, pepper, and Tabasco sauce. Pour egg mixture over chiles. Elevate on rack; microwave, uncovered, on High 10 to 11 minutes, until center is almost set. Allow to stand 5 to 8 minutes before serving. Makes 6 servings.
