    "Martha White 100th Anniversary Southern Traditions"

    House manager Scott King explained how he adapted this recipe from one he found in the "Martha White 100th Anniversary Southern Traditions" cookbook.

    List of Ingredients





    1 tablespoon vegetable oil
    1 pound smoked sausage, cut into 1-inch pieces
    2 green bell peppers, cored and seeded and cut into 1/4-inch wide strips
    1 onion, peeled and cut into thin wedges
    1 14-ounce can diced tomatoes, drained
    1 15-ounce can corn, drained
    1 15-ounce can creamed corn
    1 4-ounce can mild chili beans, drained
    2 15-ounce cans black beans, drained
    1 cup self-rising corn meal mix
    1/4 teaspoon cayenne pepper
    2/3 cup milk
    1 egg, beaten

    Recipe





    Heat oven to 400 degrees

    Grease a 13-by-9-inch baking dish. Heat the oil in a large soup pot or Dutch oven over medium-high heat. Add sausages, bell pepper strips and onion, and cook, stirring, until sausage browns and vegetables soften, about 10 minutes.

    Add the tomatoes, corn, creamed corn, chili beans and black beans, and mix well. Lower heat, and simmer 5 minutes or so to heat through. Pour into the greased baking dish.

    In a small bowl, combine cornmeal mix, cayenne pepper, milk and egg. Stir until batter is smooth. Pour evenly over the sausage-vegetable mixture in the baking dish.

    Bake in middle of oven 25 to 30 minutes, or until cornmeal crust is set and nicely browned.

    Serves 6 to 8.
