    John Major Onion Soup

    List of Ingredients





    This is good topped with large toasted slices of French bread which have been covered with grated Gruyere cheese and grilled until golden.
    8 medium onions
    2 oz butter
    1 tbsp olive oil
    1 tsp mustard, to taste
    Salt and freshly ground black pepper
    3 cans of consomme soup
    8 fl oz white wine

    Recipe



    METHOD
    In a pan, fry the onions in the butter and olive oil until golden. Add the mustard, salt and pepper, then stir in the consomme and simmer for 1 hour. Stir in the white wine a few minutes before the end and serve hot.

    Serves 4 to 6
