John Wayne's Cheese Casserole
List of Ingredients
1 pound of Cheddar cheese, grated
1 pound of Monterey Jack Cheese, grated
1 - 4 ounce can of green chile peppers, chopped
1 - 4 ounce can of jalapeno peppers, chopped
4 egg whites, whipped till stiff peaks form
4 egg yolks
2/3 cup of canned evaporated milk
1 teaspoon of salt
Recipe
Mix together the Cheddar cheese, Monterey Jack cheese, green chile peppers and jalapeno peppers.
Mix together the egg yolks, evaporated milk and salt.
Fold the egg whites into the egg yolk mixture carefully with a rubber spatula.
Put the cheese mixture into a shallow 2 quart casserole dish.
Pour the egg mixture over the cheese and ooze down into the cheese wiwth a fork.
Bake in a preheated oven at 350 degrees F. for 30 minutes.
Remove from the oven, lay a ring of sliced tomatoes around the edge of the casserole.
Bake for another 30 minutes or until the top turns brownish.
