Tom Hanks Creamy Cheesecake
List of Ingredients
For the base
1 small packet digestive biscuits, crumbled
1 tbsp caster sugar
3 tbsp butter, melted
For the filling
3 x 8 oz/225g cream cheese, softened
4 eggs
8 oz/225 g caster sugar
2 tsp vanilla essence
For the topping
0.5 pint/275 ml sour cream
2 tsp vanilla essence
1 tbsp caster sugar

METHOD
For the base, mix together the crumbled biscuits, sugar and melted butter. In a 10in/25cm springform pan, press the mixture firmly onto its base. Chill until required.
For the filling, beat the cream cheese with an electric mixer until soft. Adds the eggs, sugar and vanilla and continue to mix for 5 minutes. Take the prepared base out of the fridge and pour the mixture into the pan. Bake in an oven preheated to 190C/375F/Gas Mark 5 for 50 to 55 minutes.
For the topping, whip together the cream, vanilla and sugar. Spread generously on top of the hot cake and bake for 5 minutes. Allow to cool completely before chilling for several hours. Serve with your favourite fruit topping.
