Hello once again........it is so nice to be here...... i am enjoying the time i spend writing for you. it seems the subject of children and food is a topic of conversation......since i am way past that point, it is hard for me to even remember........so, i went digging and found some "dirt" so to say...... I remember teaching my granddaughter, Erica, how to cook and the enjoyment we shared in the kitchen. First we had to decide what to make, and we found all the ingredients, and then had a wonderful bonding time. Erica was also taught that we clean up after we finish, and of course when she was little, she loved washing the dishes.. i hope you enjoy the following and maybe you can share some bonding time also. Please remember all of these are to please the kids and make their meals a little more favorable to them.
Kid-Friendly Nachos
A South of the Border Snack.
4 Servings.
1 bag tortilla chips
2 tablespoons mild green chilies or olive
1 cup grated cheese (Cheddar, Swiss or Monterey Jack) Instructions:
Place chips on microwave-safe plate.
Sprinkle olives and/or chilies and cheese over chips. Microwave on 70% (medium-high) power for 1 to 2 minutes or until cheese melts.
Kid-Friendly Presto Pizza
2 servings.
1 English muffin
2 slices of tomato
Pinch of dried basil or oregano
2 slices of Mozzarella cheese
Choose your own toppings: Pepperoni, mushrooms, etc. (optional)
Split muffin in half and place tomato slice on each half. Sprinkle tomato with basil or oregano. Top with cheese and toppings. Place on paper or microwave-safe plate.
Microwave on Medium-High (70%) power for 2 to 3-1/2 minutes or until cheese melts.
1 pkg. (16 oz.) chocolate sandwich cookies 2 cups cold milk
1 pkg. (4-serving size) JELL-O Chocolate Flavor Instant Pudding & Pie Filling
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed 8 to 10 (7-oz.) paper or plastic cups
Gummy worms
CRUSH cookies in zipper-style plastic bag with rolling pin or in food processor.
POUR cold milk into large bowl. Add pudding mix. Beat with wire whisk 2 minutes. Let stand 5 minutes. Stir in whipped topping and 1/2 of the crushed cookies.
PLACE about 1 tablespoon crushed cookies into each cup. Fill cups about 3/4 full with pudding mixture. Top with remaining crushed cookies.
REFRIGERATE until ready to serve. Garnish with gummy worms just before serving.
MICROWAVE butter and marshmallows in large microwavable bowl on HIGH 1 1/2 to 2 minutes or until marshmallows are puffed. Stir in gelatin until well mixed.
POUR marshmallow mixture over popcorn in large bowl. Mix lightly until well coated. Shape into 12 balls with lightly greased or wet hands. Top each ball with a gumdrop spearmint leaf half to create stems. Decorate with melted BAKER'S GERMAN'S Sweet Baking Chocolate to make jack-o-lantern faces.
"Kids Can Fix It" Taco Salad
the kids do everything except cook the meat. Individuals can add more taco sauce to taste. Adjust the quantity according to your meal needs.
Ingredients:
Lettuce - torn into small pieces
frito Chips -
Black Olives - sliced or chopped
Taco blend Cheddar Cheese
Tomatoes, cut up
Ground Beef - cooked with Taco Seasoning can kidney beans, drained
Taco Sauce - we use Ortega smooth Taco Sauce Directions:
cook beef , beans and taco seasoning together , according to directions
All ingredients are put in a large bowl and tossed. The salad is ready to serve.
Bubble Pizza
Quick & Easy!
Note: You may also add: mushrooms, black olives, onions or any of your favorite pizza toppings.
Ingredients:
2 tubes buttermilk biscuits
1-16 oz. can pizza sauce
1 to 1-1/2 lbs. ground beef
2 cups shredded Mozzarella cheese
2 cups shredded Cheddar cheese
Directions:
Brown ground beef and drain.
Quarter the biscuits and mix with the beef and pizza sauce in a large bowl.(kitchen scissors works great)
Put in a 9 x 13 greased pan.
Bake at 400 degrees for 20 minutes.
Remove from oven and place cheese on top, return to oven and bake 10 minutes more.
Let stand for 10 minutes before cutting.
Hungry Jack Casserole
Ingredients:
1-1 1/2 lbs. ground beef
1 tsp. salt
1 can pork-n-beans
1 can corn (drained)
2 Tbsp brown sugar
3/4 cup BBQ sauce
1 Tbsp onion
1 can Hungry Jack biscuits
1-2 cups shredded cheddar cheese
Directions:
Preheat oven to 375 degrees.
Brown beef and onions.
Add salt, pork-n-beans, corn, brown sugar, and BBQ sauce. Heat till bubbly.
Pour into 2 qt. casserole dish.
Cut biscuits in half.
Place biscuits (cut side down) around on top of casserole. Sprinkle with cheese.
Bake for 25 minutes.
Sloppy Joes
Serve on warm buns.
Ingredients:
2 1/2 lbs. hamburger
1 med. onion, chopped
2 1/2 Tbsp. Worcestershire sauce
1/3 c. brown sugar
Salt & pepper to taste
1/2 c. catsup
1 Tbsp. mustard
10 3/4 oz. cream of mushroom soup
Directions:
Fry hamburger with salt, pepper, and onions. Drain grease
Add Worcestershire sauce, sugar, catsup, mustard and mushroom soup. Heat and serve.
Swiss Steak Dinner
Ingredients:
1 lb. cube steak or flank steak pounded with meat pounder. 1/4 cup flour
salt
pepper
1 large onion sliced in thin slices
1 can regular stewed tomatoes
1 tablespoon vegetable oil
Directions:
Heat oil in large frying pan on medium heat. Cut meat in 3 inch pieces and coat with flour, salt and pepper. Place coated meat in pan and brown on both sides about 2-3 minutes for each side.
Scrape up flour bits that stick to pan.
Add sliced onions scattering them around top of meat. Pour in stewed tomatoes, cover and simmer on low for about 30 minutes.
Meat will become tender this way.
Uncover occasionally to stir and scrape up any bits that are sticking.
Add water or more stewed tomatoes if not enough liquid. Serve over mashed potatoes.
Corn-Flake Chicken
Ingredients:
2 boneless chicken breasts cut into strips (you can buy tenders already cut )
2 cups of corn flakes
2 teaspoons of oregano
1/2 teaspoon black pepper
1/4 teaspoon of salt
Directions:
Mix the corn flakes, oregano, black pepper, and salt together. Put the mixture in a large zip lock bag, and crush the mixture with a rolling pin.
Spray a cookie sheet with Pam or equivalent cooking spray, and preheat the oven to 350degrees.
Take each chicken strip and dip in water Toss them in the zip lock bag with the corn flake mixture and shake (just like shake and bake). (Kids love this part!!) Place the strips on the cookie sheet and bake for 20-25 minutes. (I recommend turning them half way through to cook evenly. Also, depending upon the thickness of the strips, the cooking time may vary.)
Boil chicken then shred.
Grate cheese.
Cut corn tortillas into fourths.
Cook soup with water then add taco seasoning. Start to layer your 13x9 pan. Tortillas, Chicken, Cheese, Tortillas, Chicken, Cheese etc....
Then pour soup over top.
Cook for 45 minutes at 350 degrees.
Homemade Chicken Strips
Ingredients:
12 boneless chicken breasts
1 canister Progresso bread crumbs (any flavor) 1/2 c. grated parmesan cheese
1tsp. salt
1tsp. onion powder
2 sticks of melted butter
Directions:
Preheat oven to 350 degrees.
Cut chicken into cubes or strips.
Mix together bread crumbs, Parmesan, salt, onion powder. Dip chicken in melted butter
Roll in bread crumb mixture
Place on ungreased cookie sheets.
Refrigerate until ready to cook.
Bake 15-20 min, turning once.
Johnny Mac Casserole
Ingredients:
1 lb. Ground Round
1 package Sloppy Joe Mix
1 can Tomato Paste
3/4 c. Water
1 c. Cheddar Cheese
1 tsp. Dried Minced Onions
1 pkg. Large Pasta Shells
Directions:
Brown meat
Drain fat and add package of Sloppy Joe mix, tomato paste and cheese Simmer for about 5 min.
Add onions then toss with cooked pasta.
Place in a baking dish
Top with cheese and parsley.
Bake at 350 degrees for 30 min...
Mini Muffin Meat Loaves
Serves four to six people.
Ingredients:
1 package (about 1 1/4 lbs.) fresh ground turkey or ground turkey breast.
1 large egg, beaten
1 cup Italian seasoned bread crumbs
1/2 cup chopped onion
2/3 cup ketchup, divided
salt and ground pepper
Directions:
In large mixing bowl, combine ground turkey, egg, bread crumbs, onion, 1/3 cup ketchup, 1 teaspoon salt and 1/4 teaspoon ground pepper; mix well.
Grease a six-cup muffin tin, shape meat mixture into small rounds and place in muffin cups.
Spoon remaining ketchup on top of loaves and bake at 350 degrees for 30 minutes.
To serve, use a small spatula to lift loaves onto plates.
Hash Brown Casserole
Ingredients:
2 lbs Frozen Hash Browns
1 can cream of potato soup
1 can cream of mushroom soup
1 cup of chopped onions
1/2 cup of chopped green peppers
8 oz. sour cream
1 teaspoon salt
1/2 teaspoon pepper
2 cups shredded corn flakes
Directions:
Mix all ingredients and pour into a greased 9" x 13" dish. Sprinkle additional corn flakes on top
Bake at 350 degrees for 45 to 60 minutes.
Easy Tater Tot Casserole
Ingredients:
1 lb of hamburger
1 can of Cream of Mushroom Soup
1 pkg Lipton Onion Soup Mix
Tater Tots
Shredded Mozzarella or Cheddar Cheese or both Directions:
Brown hamburger
Drain
Mix with mushroom soup and onion soup mix Cook over medium heat for about 3-5 minutes Pour into casserole dish and spread out Pour half of shredded cheese over mixture Cover mixture with tater tots and press into mixture Spread ketchup over tater tots
Sprinkle with remaining cheese
Bake at 375 degrees for approx. 20 minutes
Marie's Tater-Tot Casserole
Ingredients:
1 can cream of mushroom soup
1 can cream of chicken soup
1 can water
1 bag frozen tater tots
grated cheddar cheese (enough to cover casserole) 1 bag regular potato chips (crushed up)
Directions:
Mix the soups and water together well to make a thick sauce. (do not heat)
Pour over frozen tots in a 13 x 9 x 2 (inches) casserole dish Top with crushed potato chips
Cover with grated cheddar cheese (enough to completely cover) Bake at 350 degrees for 45-55 mins or until edges are bubbly
Dad's Tuna Noodle Casserole
Ingredients:
2 cans tuna packed in water drained
2 cans cream of mushroom soup
1 package egg noodles (16oz.)
grated cheddar cheese
can of French's french fried onions
Directions:
Preheat oven to 375 degrees.
Prepare noodles as the package says, drain and put in a large mixing bowl.
Combine tuna and cream of mushroom soup in a pan and warm it up. Mix soup and tuna with the noodles and pour into a casserole dish. Top with grated cheddar cheese and french fried onions. The amount depends on your own tastes. You can also use either potato chips or those Chinese Chow Mein noodles in place of the French Fried Onions. Bake at 375 degrees until the cheese is melted and serve.
