Apple Fritters

Recipe Introduction
Nothing beats deep fried dough, except maybe deep fried dough with fresh apples in it. I like to use Granny Smith apples. You can also sprinkle these with cinnamon and sugar and serve alongside ice-cream.
List of Ingredients
For the Apples
5 large apples - peeled and sliced
into 1/2 inch thick slices
1 tablespoon rum - optional
1 1/2 cup vegetable oil - for deep-frying
To Make the Batter
1 tablespoon sugar
3 eggs - separated
1 cup all-purpose flour
1/8 teaspoon salt
1/2 cup beer
confectioner's sugar
Recipe
To Make the Batter
In a large bowl, mix egg yolks, flour, sugar, and salt until combined (will be lumpy). Mix in beer until batter is smooth. Set aside and ideally let rest for 1 hour.
In a medium bowl, beat egg whites until stiff. Gently fold into beer mixture.
For the Apples
Sprinkle 1/2 inch thick apple slices with rum.
Frying
Heat the oil until very hot. Dip the apple slices into the batter and fry in the hot oil until golden brown, about 4 minutes per side (flip apple slices to make sure both sides brown). Remove with a slotted spoon and transfer to a paper towel lined plate. Sprinkle with confectioner's sugar or favorite syrup.
