1 1/2 cups sour cherries, pitted, or 3/4 cup prepared cherry pie filling
1 tablespoon fresh lemon juice
Pinch salt
Sugar, to taste
3 egg whites
Preheat oven to 375 degrees.
Recipe
Puree cherries (to make 3/4 cup puree).
Oil a 1-quart souffle dish and sprinkle with sugar.
In a small pan over low heat, heat cherry puree. Add lemon juice, salt and sugar to taste; stir to blend, remove from heat. If using prepared cherry pie filling, heat in a small pan.
Beat egg whites until stiff but not dry; fold into hot puree until evenly blended. Spoon into souffle dish; bake 20 to 25 minutes, until firm and lightly golden.
MAKES 8 SERVINGS.
