Fast Berry And Peach Brûlée
List of Ingredients
2 cups strawberries, hulled, halved or quartered
2 peeled peaches or nectarines, pitted, thickly sliced
1 cup raspberries or blueberries, or mixture
1 cup regular sour cream
2 tbsp rum
1 tbsp brown sugar or liquid honey
1/4 cup brown sugar
Recipe
Preheat broiler and place oven rack about 4 inches from element.
In bowl, toss together strawberries, peaches or nectarines, and raspberries
or blueberries. Pour into 9-inch pie plate or shallow ovenproof dish, such
as an attractive quiche pan, then distribute evenly over bottom of dish.
In small bowl, stir together sour cream, rum and 1 tablespoon brown sugar or
honey. Evenly spread over fruit. Gently press down any fruit that is
sticking up. If making brûlée ahead, cover with plastic wrap and refrigerate
up to 4 hours. Fruit may darken or get a bit watery as it stands.
Just before serving, sprinkle 1/4 cup brown sugar over top. Broil until
sugar is bubbly, watching carefully to make sure it doesn't burn, 2 to 4
minutes.
Spoon into dessert dishes and serve immediately.
Makes 6 servings
