    Lemon Shaker Pie

    2 large lemons
    2 cup sugar
    4 large eggs
    pastry bottom and top crusts for 9" pie


    Recipe



    This pie comes from the Shaker communities of Ohio. The secret to making this
    pies is to cut the lemon slices as thin as possible. They should be very close
    to paper thin. Some versions of this recipe call for just the insides of the
    lemon.
    Slice the lemons paper thin. Cover the slices with sugar. Let stand all day (for about 12 hours) stirring occasionally. Roll pastry into the bottom crust of a 9"
    pie. Roll our the top layer. Beat eggs lightly and stir into the lemons until
    they are thoroughly mixed. Turn in to the pie shell. Cover with the top crust.
    Cut air vents. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and bake
    another 30 minutes or until the crust is golden.
