Ristorante Bartolotta Creme Brulee

6 egg yolks
1/3 cup plus 4 tablespoons sugar (divided)
2 cups whipping cream
1/2 cup plus 2 tablespoons milk
1 teaspoon vanilla extract

Preheat oven to 275 degrees. Combine egg yolks with 1/3 cup sugar. Whisk together until smooth and creamy. Add cream, milk and vanilla, stirring until well blended. Refrigerate mixture 1 hour, then skim off any foam that forms on top.
Using four 7- to 8-ounce shallow brulee dishes, or ramekins that will hold 6 ounces of custard, place dishes on baking sheet with sides. Fill each brulee dish or ramekin with 6 ounces ( 3/4 cup) of mixture. Pour hot water into pan to reach about halfway up sides.
Bake 1 3/4 to 2 hours or until custards jiggle only slightly in middle. Remove from oven; let cool completely.
Preheat broiler. Sprinkle 1 tablespoon of reserved sugar evenly over each dessert.
Place about 3 to 4 inches from broiler with oven door open, and let them caramelize. This will take about 5 minutes. Serve immediately. Makes 4 servings.
