Shrimp Marinated in Fresh Dill
List of Ingredients
1 tablespoon salt
1 teaspoon chopped fresh dill weed
1 lemon, sliced
2 1/2 pounds medium shrimp in shells
--Marinade--
1/2 cup olive oil
1/2 cup dry white wine
1 tablespoon chopped fresh dill weed
1 teaspoon freshly ground black pepper
2 drops hot pepper sauce
1/2 cup lemon juice
Salt to taste
1 tablespoon snipped chives

Colonial America usually had access to fresh shrimp, since nearly everyone at the time lived along the Atlantic coast. Here's a clever new spin on a very old presentation.
In a large pot, combine 1 quart water, the salt, dill weed and lemon and bring to a boil over high heat. Add the shrimp, reduce heat to medium and cook until shrimp are firm and pink, 3 to 4 minutes. Drain immediately and
chill. Peel and devein the shrimp and place in a crock or bowl. Make marinade and pour over shrimp. Chill at least 2 hours before serving.
Makes 8 to 10 servings.
MARINADE DIRECTIONS:
In a small bowl, mix the oil, wine, dill, pepper, pepper sauce, lemon juice, salt and chives.
