Recipe
Place fish in a buttered baking dish or pan. Fill each fish with stuffing of your choice. Bake in preheated 375-degree oven for 20 to 25 minutes, or until fish flakes easily.
Makes 4 servings.
Lemon Wild Rice Stuffing: In a skillet, saute 1/3 cup sliced celery and 2 Tablespoons chopped green onion in 2 Table-spoons butter or margarine until tender. Remove from heat. Stir in 1 cup cooked wild rice, 1/4 cup coarsely chopped cashew nuts, 1/2 teaspoon grated lemon peel and 1/4
teaspoon dried summer savory leaves.
Orange Zucchini Stuffing: In a skillet, saute 2 cups chopped zucchini and 1/2 cup chopped onion in 1 Tablespoon butter or margarine until onion is tender. Remove from heat. Stir in 1 11-ounce can drained mandarin orange segments, 1/2 teaspoon dried oregano leaves and 1 1/4 teaspoon salt.
