Homemade Shake-and-Bake
Makes about 3 1/2 cups
List of Ingredients
1 cup all-purpose flour
2 tsp cornstarch
2 tsp paprika
2 tsp onion powder (not onion salt)
2 tsp salt
2 tsp sugar
10 tsp vegetable oil
3 1/2 tsp poultry seasoning
2 tbsp crumbled dry parsley
2 cups fine dry breadcrumbs
6 pcs cut up chicken
Recipe
Put all dry ingredients in a mixing bowl and add oil. Mix with fingertips.
Keep in zip-top plastic freezer bag in freezer between uses. Use to coat
chicken pieces, pork or veal.
Line cookie tin with aluminum foil and grease the foil. Wet each piece of
chicken or meat with water. Shake off excess and shake in bag of mix to
coat.
Do one piece at a time. Place on foil and bake in 400 F oven for 30 minutes
or until done, depending on size of pieces.
Return unused mix to freezer.
