Koosa (Stuffed Squash)

12 Koosa (zucchini)
1 cup Rice
1 small Can tomato sauce
1 can (16 oz.) tomatoes
salt & Pepper to taste
1 1/2 lb Ground lamb
Water
garlic salt & lemon juice
Recipe
Cut stems and scoop out seeds of squash . I use an apple corer.
STUFFING: Mix rice, lamb and all spices together.sprinkle garlic salt inside squash, put a drop of fresh lemon juice inside each squash. Stuff squash with mixture, do not pack tightly.
Arrange in pan. Add tomatoes, tomato sauce, salt and pepper over squash.
Add enough water to cover, bring to a boil; then reduce to medium-low and cook for 25 minutes. Same stufing may be used for green peppers and small eggplants.
note* take the insides you just scooped out...put them in a pan...add 1 can tomatoes, crushed, 1 onion cut up,salt and pepper to taste.....
simmer untill done...about 30 mins...
this gives you another side dish.....
