TANDOORI CHICKEN
List of Ingredients
2-1/2 pounds chicken pieces, skinned
2 teaspoons salt, or to taste
Juice of 1 lemon
1 teaspoon red chili powder
1-1/4 cups plain yogurt
1-inch piece ginger, peeled and sliced
6 cloves garlic, peeled
1 medium onion, peeled and chopped
2 teaspoons garam masala, homemade or commercial powder (found at
Indian markets)
1 teaspoon each red and orange food coloring (optional)
1 red onion, cut into rings
Lemon wedges
Cilantro leaves, for garnish
Recipe
With a sharp knife, cut 2-inch-deep incisions into chicken about 2
inches apart. Rub with salt, lemon juice and red chili powder. Cover
and refrigerate while making marinade.
In a blender or mini food processor, combine yogurt, ginger, garlic,
onion and garam masala; blend until smooth. Add food coloring. Cover;
marinate 4 hours or overnight in the refrigerator. Grill poultry on
medium high, or bake in preheated 400-degree oven for 30 minutes.
Remove; baste chicken with remaining marinade. Grill 10 minutes.
Garnish with onion rings, lemon wedges and cilantro.
