Determining the volume or size of a pan
Baking pans of glass, ceramic or other materials aren't always well marked
with the size, or it may have worn off from use. Information on the volume
or the amount of ingredients a particular pan will hold may not be stamped
on it, even if the original label contains that information.
What's the procedure?
For the size, simply get out the ruler and measure the length and width of a
pan across the top from one inside edge to the other. (For a circular pan,
just measure across the center.) The depth can be measured by holding the
ruler perpendicular inside the pan.
To gauge the volume, fill the pan with water, using a measuring cup, to
determine the number of cups required to reach the point just shy of
overflowing. That will give you the volume of the pan in cups. If the pan
has a removable bottom, substitute sugar for water.
