    List of Ingredients




    MEAT MIXTURE:
    1/2 of a 10 oz. can of cream of mushroom soup (undiluted)
    3/4 c. bread crumbs
    1 T. fresh oregano or 1 t. dried oregano (or to taste)
    1/2 c. fresh flat leaf parsley, finely chopped
    salt and pepper to taste
    2 large eggs, beaten
    1 lb. ground lean pork
    1 lb. ground lean beef

    SAUCE:
    2 1/2 cans (10 1/2 oz. ea.) cream of mushroom soup (use the remaining 1/2 can from above-undiluted)
    1 1/2 soup cans of water


    VEGETABLE MIXTURE:
    1 c. onions, finely chopped
    1 c. celery, finely chopped
    1 c. carrots, finely chopped
    2 cloves garlic, finely chopped

    Recipe




    Steam all ingredients til blanched (about 2-3 minutes). Drain well and set aside.



    Mix together with steamed vegetables. Add fresh, chopped mushrooms to taste if desired. Pack into a (9x13x2 inch) pan (this is a someflat flat meatloaf).

    Bake meatloaf at 350° for 30-40 minutes. Drain off any fat that has gathered in the dish. Next pour over the following sauce:



    Top with sauteed & drained mushrooms. No specific amount of mushrooms specified.

    Bake for an additional 35-40 minutes. Serve with mashed potatoes and green vegetable.
